Engagement Party Recap

It's been an entire month since Nubia and I celebrated our engagement with nearly one hundred of our closest family members and friends. Since getting engaged, the last few months have been a total roller coaster with job transitions and a series of personal challenges, but the outpouring of support we've received has been immeasurable.

When we thought about 'what to do' it was either hurry up and get married OR take our time. And having known each other for a literal lifetime, we decided on the latter. Our plan is to squeeze EVERY ounce out of this experience because for us it's not what we do, but how we do it.

As foodies, we spent a lot of time thinking about the menu, and luckily, Riverpark is not only a beautiful venue, the food is absolutely dynamic!

It's no secret that Mexican food is my favorite, so we began the night with two types of passed tacos - beef brisket with red onion, avocado, cilantro and charred chile and merluza tempura with cabbage, cilantro, onions, and radishes.

Our first of two buffet stations featured some of my favorite Latin flavors - grilled shrimp tostadas with black beans, avocado, pineapple, pickled Fresno chiles, crema, and cilantro, as well as cheese enchiladas with a blend of queso Blanco, queso fresco, and cotija cheese, drizzled with salsa verde and crema. There was also a mixto ceviche with shrimp, cod, calamari, baby octopus, jalapeño, and cilantro, along with tortilla chips and three fresh salsas (pico de gallo, guajillo, and salsa verde).

Our second buffet station featured everyone's favorite, buttermilk fried chicken with black pepper honey. The collard greens were a standout amongst Carolina pulled pork, jalapeno honey cornbread, and potato salad.
