Ramen Hack

The last few weeks on the east coast have been a weather rollercoaster. We've flirted a lot with spring temperatures during what is still technically the tail end of winter. So, when the old man awoke from his nap and brought back the hawk, many people were unprepared, including myself and the missus, which led to us both feeling a bit under the weather for a few days. After spending a whole day inside suffering from scratchy throats and sniffles, we decided we needed a nice, hot bowl of something delicious. Why not ramen noodles? Now, I don't claim any superlatives to describe this recipe, but it is a really easy, simple dish to whip up when you're in need of a little cold comfort.
Ingredients (serves 2)
3 packs of ramen noodles with the seasoning packets (you'll only use 1)
1 tsp of red chili flakes
1 tsp of cayenne pepper
1 tsp of black pepper
1 tsp of ground ginger
Carrots, cut into 1.5 or 2 in matchsticks
White mushrooms, sliced
Ginger, minced
Green onions
Directions
1. Cook ramen according to the directions on the package. I used only one seasoning packet because they have a lot of sodium and don't add very much flavor. Add in chili flakes, cayenne, black pepper, and ground ginger
2. Add carrots, mushrooms, and fresh minced ginger about halfway through the cooking time
3. Serve noodles and vegetables with broth poured over the top, then add sliced green onions
4. Enjoy!
