We're a few weeks into the new year and I;m finally conquering my health and fitness goals. This post-workout breakfast sandwich has all the key ingredients needed to refuel. Bacon and eggs for protein, avocados for healthy fat, vitamin rich spinach, a little tomato, essential for a BLT.
A great thing about this sandwich is it can be customized using pretty much whatever ingredients you have in your fridge. I'm already thinking about making the next one with sliced turkey and sharp cheddar cheese, instead of bacon and avocado. Yum!
- 1 toasted english muffin
- 1 fried egg
- a few slices of tomato
- half an avocado, sliced
- a handful of fresh baby spinach
- 1 slice of bacon, cut in half to fit the sandwich
