Cucumber Lime Margarita

I love a good frozen margarita. This one came together perfectly but you’ll have to do a little bit of advanced prep work. This recipe is for a frozen margarita so, you’ll definitely need a blender. I also used my slow juicer but its not completely necessary..
Ingredients
One cucumber
One pear
Limes (6 for juicing)
Pineapple juice (optional)
Tequila
Simple syrup


Start by washing all produce. I first cut my cucumber and pear into medium sized pieces. Then I juiced them using the slow juicer. After juicing I also strained out the pulp using a mesh strainer. This step is also optional, but I wanted this margarita to look a certain way so, straining out the pulp allowed it to be a perfect clear green color.
If you don’t have a slow juicer and strainer, simply “juice" the cucumber and pear together in the blender then freeze in an ice tray.

While my cubes froze, I made a simple syrup - equal parts water and sugar (about 1 cup of each is enough) brought to a boil, then cooled in the refrigerator.
8-10 hours later, once my cubes have frozen, its drink time!
Using my Vitamix blender, I added my cucumber pear cubes, a splash of pineapple juice, the juice of 2 limes, 3-4 oz of blanco tequila, and 2 oz of simple syrup and blended on high for about 45 seconds to a minute.
This drink turned out to be super refreshing and delicious. Enjoy!
