Simple Peach Kale Summer Salad

It's officially too hot in NYC to cook anything that requires extended time standing over the stove. One of my favorite meals to make for us when its just too hot in the kitchen (or I'm feeling a bit lazy) is a nice filling salad. I can pull this together in about 15-20 minutes and its fresh, healthy and delicious.
Simple Peach Kale Summer Salad
Ingredients
1 Bunch of Kale
2 Cups of Fresh Corn (About 2 Ears)
1 Peach
! Cooked Chicken Breast (or substitute for a protein of your choice)
1/4 Cup of Scallion Tops
Cherry Tomatoes
Olive Oil
Fresh Squeezed Lemon Juice
2 Tbsp Honey
Salt and Pepper
Instructions
1. Wash and dry all fresh produce. Remove and discard the kale stems. Chop the leaves. Halve the peach. Remove the pit and slice. Slice scallion tops. Slice tomatoes.
2. If adding chicken, cube cooked chicken breast (about 1-2 cups)
3. In a large bowl, first layer the kale as it will serve at the bed to showcase the rest of your ingredients. Next, add corn, peach slices, tomatoes, scallions, and chicken over top of the kale.
4. Squeeze a fresh lemon over the top. Season to taste with sale and pepper.
5. Finally, drizzle olive oil and honey to finish. Toss to combine.
6. Serve and Enjoy!
